The Olive Oil Mill can be found alongside the chapterhouse. It is an original structure from the 14th century and was originally constructed as an infirmary; it has suffered various modifications over time. There is evidence that this building was divided up into three spaces; the infirmary itself, the oratory and the refectory.
The aspect of this room was changed completely during the 18th century when it became an olive oil mill. The space that used to be a refectory is divided into two sections by a double arcade.
Most of this space is currently occupied by 32 large jars that are used to store olive oil. The only part of the primitive refectory that is preserved is the renowned grisaille by Friar Nicolás Borrás, which is a representation of the last supper.
